Ingredients
For the Pecan Crust:

1 ½ cups finely chopped pecans

¾ cup almond flour

3 tbsp melted butter

2 tbsp keto-friendly sweetener

½ tsp cinnamon

Pinch of salt

For the Cheesecake Filling:

16 oz cream cheese, softened

½ cup powdered keto sweetener

2 large eggs

1 tsp vanilla extract

¼ cup heavy cream

For the Berry Layer:

1 cup mixed berries (raspberries, blueberries, or blackberries)

1–2 tbsp keto sweetener (optional, depending on tartness)

½ tsp lemon zest (optional)

Instructions

Prepare the Crust
Preheat your oven to 325°F (165°C). Line an 8×8 baking dish with parchment paper. In a mixing bowl, combine pecans, almond flour, melted butter, cinnamon, sweetener, and salt. Press the mixture firmly into the bottom of the baking dish. Bake for 10 minutes, then set aside to cool slightly.

Make the Cheesecake Layer
Beat the softened cream cheese and powdered sweetener until smooth and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla and heavy cream until the batter becomes creamy and lump-free. Spread evenly over the cooled crust.

Add the Berry Topping
In a separate bowl, lightly mash the berries with sweetener and lemon zest. Spoon the berry mixture over the cheesecake layer, swirling gently with a knife for a marbled effect.

Bake & Cool
Bake for 25–30 minutes, or until the center is set but still slightly jiggly. Allow to cool at room temperature for 1 hour, then refrigerate for at least 3 hours—overnight for best results.

Slice & Enjoy
Lift the chilled cheesecake out using parchment paper, cut into bars, and serve.
