Ingredients

For the Cake:

2 cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon ground cinnamon

¼ teaspoon salt

½ cup unsalted butter, softened

¾ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

¾ cup sour cream (or plain Greek yogurt)

1 can (about 20 oz) apple pie filling, chopped slightly

For the Crumb Topping:

½ cup brown sugar

½ cup all-purpose flour

1 teaspoon cinnamon

¼ cup cold butter, cubed

Instructions

Preheat the Oven
Preheat your oven to 350°F (175°C). Grease or line a 9-inch baking pan.

Prepare the Crumb Topping
In a bowl, mix brown sugar, flour, and cinnamon. Cut in the cold butter using a fork or your fingers until crumbly. Set aside.

Mix the Dry Ingredients
In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.

Cream the Butter and Sugar
In a large bowl, beat the butter and granulated sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.

Combine the Batter
Add the dry ingredients to the butter mixture in two additions, alternating with sour cream. Mix just until combined.

Add the Apple Filling
Gently fold in the apple pie filling, distributing it evenly through the batter.

Assemble and Bake
Pour the batter into the prepared pan. Sprinkle the crumb topping evenly over the surface.
Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.

Cool
Let the cake cool for at least 15 minutes before slicing.
