🔪 Instructions:
- Prep the Dredging Station
In one bowl, beat the egg.
In another bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper. - Coat the Zucchini
Dip each zucchini round in the egg, then press into the cheesy breadcrumb mix to coat both sides evenly. - Fry
Heat olive oil in a large skillet over medium heat.
Add zucchini rounds in a single layer (don’t overcrowd).
Fry for 2–3 minutes per side or until golden brown and crispy. - Drain
Transfer to a paper towel-lined plate to drain excess oil. - Serve
Garnish with parsley if desired and serve hot with dipping sauce.
