Ingredients

8 cups filtered water

1 medium onion, sliced

2 cloves garlic, lightly crushed

2 carrots, chopped

2 celery stalks, chopped

1 cup chopped leafy greens (spinach, kale, or chard)

½ cup cooked chickpeas or white beans

1 small tomato, diced (or ½ cup canned, no salt added)

1 tablespoon olive oil

1 bay leaf

½ teaspoon dried thyme or oregano

Freshly ground black pepper, to taste

A small handful of fresh parsley, chopped

Salt, optional and minimal

Instructions

In a medium pot, warm the olive oil over low heat. Add the onion and garlic, cooking gently until fragrant and soft, not browned.

Add carrots and celery, stirring for another 2–3 minutes to release their natural sweetness.

Pour in the water and add the bay leaf, thyme (or oregano), and tomato. Bring to a gentle simmer.

Reduce heat and let the broth cook uncovered for 20–25 minutes.

Stir in the cooked beans and leafy greens. Simmer for an additional 5–7 minutes, until greens are tender.

Season lightly with black pepper and a pinch of salt if desired. Remove bay leaf before serving.

Finish with fresh parsley just before serving.
