It’s easy, customizable, and dangerously addictive.
Ingredients
1 pound ground beef
1 tablespoon olive oil
1 small onion, finely diced
2 cloves garlic, minced
1 cup diced tomatoes (canned or fresh)
1 cup salsa or rotel-style tomatoes
1 teaspoon chili powder
½ teaspoon smoked paprika
½ teaspoon cumin
8 ounces cream cheese, softened
2 cups shredded cheddar or a cheddar–Monterey Jack blend
¼ cup milk (optional, for thinning)
Salt and pepper to taste
Fresh cilantro, green onions, or jalapeños for garnish
Instructions
Brown the Beef
Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until fully browned, breaking it into crumbles as it cooks.
Add Aromatics
Stir in the diced onion and garlic. Sauté until the onion softens and becomes translucent.
Season & Simmer
Mix in the tomatoes, salsa, chili powder, smoked paprika, cumin, salt, and pepper. Allow the mixture to simmer for 3–4 minutes so the flavors meld.
Add the Creamy Base
Lower the heat and add the cream cheese. Stir until it fully melts into the beef mixture.
Melt the Cheese
Sprinkle in the shredded cheese and stir until everything becomes smooth and gooey. Add milk if you prefer a thinner, more pourable dip.
Finish & Serve
Garnish with cilantro, green onions, or jalapeños. Serve immediately with tortilla chips, crusty bread, or veggie sticks.
