Introduction
Some recipes carry more than flavor—they carry memories. The idea for these Skyline Comfort Cookies came from a flight I once took, where a stranger in Seat 19A shared a story so warm it softened my heart like butter left out on a sunny kitchen counter.
As the clouds drifted beneath us, they passed me a small homemade cookie wrapped in parchment paper. That cookie tasted like kindness, comfort, and the reminder that even passing encounters can leave lasting sweetness.
This recipe is my tribute to that moment: cookies that feel like a deep breath above the clouds.
Ingredients
1 cup unsalted butter, softened
1 cup light brown sugar
½ cup granulated sugar
2 large eggs
2 tsp vanilla extract
2 ¼ cups all-purpose flour
1 tsp baking soda
½ tsp baking powder
½ tsp salt
1 cup dark chocolate chunks
½ cup toasted pecans (optional, but wonderfully “nutty like a new adventure”)
Zest of 1 orange (for that airy, sky-bright lift)
Instructions
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
Cream the butter, brown sugar, and granulated sugar until fluffy—like the top of a cloud bank on takeoff.
Add the eggs one at a time, mixing well, then blend in the vanilla.
Whisk the flour, baking soda, baking powder, and salt in a separate bowl.
Combine the dry mixture with the wet ingredients, mixing until just incorporated.
Fold in the chocolate chunks, pecans (if using), and orange zest.
Drop tablespoon-size scoops onto your baking sheets, spacing them a couple of inches apart.
Bake for 10–12 minutes, or until the edges turn golden like a sunset through a plane window.
Cool on a rack, then enjoy while warm—preferably with a story worth sharing.
Serving and Storage Tips
Serve with a cup of tea, coffee, or a moment of quiet reflection.
Store in an airtight container at room temperature for up to 5 days.
Freeze unbaked cookie dough portions for future “takeoff moments”—they’ll keep for 2 months.
