Ingredients
2 tablespoons olive oil
1 medium onion, finely chopped
2 cloves garlic, minced
2 boneless chicken breasts (or chickpeas for a vegetarian option)
1 teaspoon salt (adjust to taste)
½ teaspoon black pepper
1 teaspoon smoked paprika
1 teaspoon dried oregano
1 cup uncooked rice (white or brown)
2 cups vegetable or chicken broth
1 cup mixed vegetables (carrots, peas, corn, or whatever is on hand)
½ cup grated cheese (optional)
Fresh herbs for garnish (optional)
Instructions
Heat olive oil in a large skillet or deep pan over medium heat.
Add the chopped onion and cook for 3–4 minutes until soft and translucent.
Stir in the garlic and cook for 30 seconds until fragrant.
Add the chicken breasts (or chickpeas), salt, pepper, paprika, and oregano. Cook until lightly browned.
Stir in the rice, ensuring it’s coated with the oil and spices.
Pour in the broth and add the mixed vegetables. Bring to a gentle boil.
Reduce heat, cover, and simmer for 18–20 minutes (longer for brown rice) until the rice is tender and liquid is absorbed.
Sprinkle cheese on top if using, cover again, and let rest for 5 minutes.
Fluff with a fork and garnish with fresh herbs if desired.
