2 tbsp olive oil or ghee
1 large onion, finely chopped
3 garlic cloves, minced
1-inch piece of ginger, grated
2 carrots, diced
2 potatoes, cubed
1 cup lentils (red or green), rinsed
4 cups vegetable broth
1 cup chopped spinach or kale
1 tsp cumin seeds
1 tsp turmeric powder
½ tsp chili flakes (optional)
Salt and pepper to taste
Juice of half a lemon
Fresh herbs (cilantro, parsley, or mint) for garnish
Instructions
Warm the oil in a deep pot over medium heat. Add cumin seeds and let them sizzle until fragrant.
Sauté the onion, garlic, and ginger until golden. This is the foundation — the aroma that tells you something beautiful is about to happen.
Add the vegetables — carrots and potatoes — and cook for 5 minutes.
