Ingredients
2 lbs beef stew meat, cut into cubes (or chicken for a lighter version)
4 cups beef or vegetable broth
2 large carrots, peeled and sliced
3 celery stalks, chopped
2 medium potatoes, diced
1 large onion, finely chopped
3 garlic cloves, minced
1 cup chopped mushrooms (optional)
1 cup green beans, trimmed
1 tsp dried thyme
1 tsp dried rosemary
2 bay leaves
Salt and pepper, to taste
2 tbsp olive oil or butter
1 tbsp tomato paste
1 tsp smoked paprika (optional, for depth)
Fresh parsley, for garnish
Instructions
Prep the Meat: Heat olive oil or butter in a large pot over medium heat. Brown the beef cubes on all sides for extra flavor. Remove and set aside.
Sauté the Aromatics: In the same pot, add onions and garlic. Sauté until fragrant and translucent.
Build the Base: Stir in tomato paste and smoked paprika. Cook for 1-2 minutes to release their flavor.
